Yonanas Best way to to eat Bananas

My girls and I don’t eat bananas. It’s not that we don’t like them.
To our taste buds they seem just a little but too dry and starchy.
But since bananas are healthy and are a good source of Vitamin C, Vitamin B and Magnesium I try to make them in Banana breads and muffins once in a while.
The downside is of course; you’ll have to add extra sugar, flour and therefore extra calories. It also it takes a bit of time to make and bake muffins and banana bread.

So when we went shopping at Walmart a few months ago I noticed a contraption called the “Yonanas” on the shelf that promised to make healthy   ice cream out of 100% fruits like bananas. I was intrigued, but obviously my first thoughts coming to mind were  “Impossible” and “Yeah, right.”
By that time, my kids had discovered this “ice cream machine”  as well. They were immediately excited and agreed that they would be eating Bananas and fruit every day if we PLEASE just buy this Yonanas machine.

I  had to admit it looked delicious and nutritious. I kept reading the instructions on the box, waiting for the catch. What, I didn’t have to add extra sugar, heavy cream. Did the machine require me to buy special artificial flavours or sweeteners?
It sure sounded a bit too good to be true. Being a natural skeptic, I placed the box back onto the shelf.

The next week I was shopping at Walmart again and this time the Yonanas was on sale for a whole $10 off.
We do enjoy a treat of ice cream a few times a month, and if there really was a way to make it healthier, I was now happy to give this a try. So, this time the Yonanas went into my cart and I hurried to the checkout.

Determined this machine would not suffer the same fate and collect dust in the basement as my “healthy donut maker” and other little “As Seen On TV” novelties did, I opened the box and we started the assembly right away.

The Yonanas consists of the main unit and five parts, and they are super easy to assemble (video here)
For the first use, we cleaned all parts with warm soapy water. The chute, blade and plunger parts are even dishwasher safe.
The machine comes with its own recipe booklet and more can be found online.

To make a batch of Yonanas Ice cream you can use frozen

  • bananas
  • strawberries
  • mixed berries
  • mangoes
  • blueberries
  • or a mixture of bananas and berries
  • bananas and various (frozen) candies like Reese’s, Smarties, Caramels etc.

Picking the “perfect” bananas is very important.
They cannot be green (as pictured). I pick nice yellow ones, with a few brown spots.
The same type you would choose for baking. The upside is that they are often found on sale/ clearance as well.

When preparing the bananas, I recommend you peel bunch of them, place them on a baking sheets and freeze the bananas overnight.
The next day you can use 5 or 6 of the bananas for your recipes (or whatever you need) and place the other ones in a Tupperware container, back in the freezer.

That way, you always have frozen bananas, ready to be used when you feel like making a treat in a flash.

Take the six bananas (serves about 5 people) and leave them on a plate for about 8 minutes. They will defrost slightly and have the perfect  consistency to make ice cream.
If you leave them too long, the mixture will be a little soft.

Get a bowl ready and place it beneath the Yonanas spout.
Then turn on the machine and simply place one banana inside the chute. Gently push it down with the plunger and follow with the next banana.

This process is super fast and once you have used all the bananas, make sure to scoop up the rest from inside the machine.
There is quite a bit of “ice cream” between blade and rubber. It’s too good to waste, so make sure to add it into a bowl.
Then simply mix and scoop into bowls and serve.

Of course, you are wondering how does it taste?

The answer in short: It’s just Amazing!

I served it to my husband, and he did not want to believe it wasn’t ice cream.
It is super creamy, incredible delicious and taste rich. My daughter who hates eating bananas loves this treat.

So far  we have tried the berries Yonanas; Banana mixed with berries, Bananas, PB and Mixin’s and melon Yonanas.

We loved every one of them except the cantaloupe. It was so nasty that not even hubby would eat it. Maybe it ws not ripe enough, or maybe this fruit is unsuitable?

The Yonanas has become a favourite dessert in our home, and we especially enjoy the Yonanas with Mixin’s.

My kids love to add Reese’s pieces and a scoop of peanut butter (per recipe)
It tastes as good as Premium any ice cream, and it’s hard to believe it’s just bananas and a little candy.

Baked Apples Recipe, Grandma’s Traditional Bratäpfel with Marzipan

A traditional Christmas treat in our home is my Grandma’s Baked Apples dish, or as they are called Bratapfel
in Germany. This heavenly apple dessert is a perfect finale to any Holiday meal or served as an afternoon treat.
My Grandmother used to stuff our apples with Rum raisins, marzipan, almonds and serve them warm, topped with a delightful vanilla sauce.
You may also use a scoop of Vanilla ice cream instead.
I love the sweet smell of  homemade baked apples, and these treats are a welcome alternative to traditional Christmas cookies and bars.

To get started it’s s important to choose a suitable variety for baked apples.
Best choices include tart apples like Cortland, Mutsu, Idared or Red Prince.

 

Ingredients:

  •  6 medium Apples (red)
  • 1/2 cup or 60g chopped almonds
  • 2/3cup or 150g Marzipan paste
  • 2 tbsp. or 30g Butter
  • 1/2 cup brown sugar
  • 1 ½ sachet vanilla sugar
  • 1 1/2 tablespoons  raisins

 

Instructions
Prepare the filling
Mix the chopped almonds, marzipan, butter, brown sugar  and vanilla sugar mix, knead  and form  into 6 Roles.
Place the  apples in a  well-greased oven dish and place a marzipan roll into each of the apples.

Prepare the Apples:
Since  we keep the skin, make sure to wash apples well. Cut off the top third of the Apple and place aside.
Carefully remove the apple core with a knife or use an apple decorer. Make sure to leave the bottom intact.

Grease the bottom of a baking dish with butter or margarine
and place the apples inside.  Cover each apple with it; s top and bake the apples at 390F for 25 minutes in the oven baking.

Easy Microwave Mug Cake Recipes, No Baking Needed!

Do you ever have the sudden craving for A piece of cake?
The next birthday or holiday may days or weeks away, or it’s 7 p.m. at night.
Besides, you only want to eat ONE yummy serving and not the whole cake to tempt you!
That’s why I love Microwave mug cakes.
They are just the perfect fill-in for the occasional cake craving.
Mug cakes are so easy to make in a snap, and they don’t have to be boring either. The best thing, there is no clean up required, and you don’t even need bowls or a mixer.

Basic recipe for vanilla mug cakes (variations below)

  •  four (4) tbsp pastry or regular flour
  •  three (3) tbsp sugar or sugar substitute
  • 1/4 tsp baking soda
  • four (4) tbsp milk
  •  two (2) tbsp vegetable oil
  • 1/2 tsp vanilla extract

Recipe variations:

  •  chocolate chip mug cakes
  • add extra two tbsp unsweetened cocoa powder
  • add extra tbsp chocolate chips

Directions:

Get a large mug and add the dry ingredients like flour, sugar, baking soda (and any of the optional  ingredients.)

  1. Stir and mix until well blended.
  2. Then combine milk, vanilla, and oil.
  3. Place your cup in the microwave and cook on high for one minute and 30 seconds.
  4. Time may vary with different microwaves.
  5. Mug will be hot, so use oven mitts and remove carefully  from microwave.
  6. Next, insert a toothpick in the middle of the cup.
  7. If it is clean or almost clean, the cake is done and can be  placed on a rack or plate to cool for 5 minutes before serving.
  8. If not done yet, place mug back into microwave and cook for 10 seconds and repeat above steps.(toothpick check)

Sprinkle chocolate chips on top.

Candy Apple Recipes - Easy Caramel + Chocolate Apples

Fall is apple season in Ontario. Enjoy your own homemade Toffee caramel candy and chocolate apples.
There are so many delicious ways to dip, cover and sprinkle apples and I hope you will enjoy this
Yummy short list.

Caramel Apple with Nuts Recipe

Ingredients:

  • 6 apples
  • 225 g chopped hazelnuts, walnuts or pecans
  • 190 g sugar
  • 3 tablespoons honey
  • 1 ½ tablespoons butter
  • 225g heavy cream
  • 6 popsicle sticks

Directions:

1. Toast the nuts in a pan without oil fry until golden brown. Allow to cool.
2. Wash and dry the apples. Remove the stalks and insert a wooden stick into each apple
2. Pour sugar, honey, butter and heavy cream into a saucepan.
3. Heat until for about 12 minutes until melted into a soft and creamy caramel. Do not let boil
4. Place each apple (one by one) first into the caramel sauce until covered then roll immediately in the nuts and place on baking paper
Repeat until all apples are covered with caramel and nuts
5. place apples on a baking sheet until cold and firm.

Timesaver Variation

Make a quick caramel sauce with one package of caramels and 2 Tbl milk.
Place caramels and milk in a microwave- proof dish and microwave for 2 minutes. Stir once.
Allow to cool slightly.

Fall is not complete without the scent of freshly baked apple crisp.
I absolutely love the smell of cinnamon, and when the cooler temperatures hit, I could eat a slice of Apple Crisp as a daily dessert
Of course with the sugar, fat and calories I had to find a better way to enjoy our freshly harvested apples.
To enjoy this treat more often, I came up with this super easy Microwave Apple Crisp, that is healthy enough to enjoy every day! Not only that, this recipe is so fast, that you can easily whip it up from start to finish in less that 15 minutes !

 

Easy Microwave sugar-free Apple Crisp in 10 Minutes!

 

 You will need these ingredients 

  • 3 medium sized apples
  • 1 tsp lemon juice
  • 3 tbs cinnamon “sugar” here is my recipe for sugar-free cinnamon sugar
  • 1/2 tbsp raisins and or nuts
  • 1/4 cup of oatmeal or granola mix.
  • microwavable dish

1.  Wash and slice the three apples (peel first if desired).
2. Place apple slices in bowl and mix with a tsp of lemon juice.
3. Sprinkle with three tbs of the cinnamon sugar. Stir.
3. Then add raisins (or nuts) and the granola or oatmeal. Mix until all are blended and place in microwave.
4. Cover with microwave lid and heat on high for 2 minutes.
5. Stir the apple slices and heat again for 2 minutes. Repeat for another 1 1/2 minutes until apples are soft.
6.Remove from microwave and let the dish cool slightly.

Eat while still warm.
Enjoy and make again tomorrow!

Mascarpone Cheesecake with Peanut butter Chocolate Sauce

Mascarpone Cheesecake with Peanut butter Chocolate Sauce and Chocolate Cookie Crust

 

Ingredients

100g butter and a little extra to grease pan
300 g chocolate cookies
4 medium eggs
pinch of salt
250 g sour cream
50 g peanut butter
250 g sugar
30 g corn starch
500 g mascarpone
200 g whipped cream
50 g dark chocolate
4 tablespoons unsalted roasted peanuts
1 freezer bags , aluminum foil

 

Directions

1. Place the aluminum foil inside a round cake pan (26 cm or 10inch).
Grease the foil.
Fill the freezer bag with the chocolate cookies and seal the bag well.
The use a rolling pin and crumble the cookies until fine pin.
Take the 100 g of butter and melt it in a pan.
Mix the crumbled cookies and melted butter and press the mixture evenly into the cake pan.
Place in the fridge to cool.
2. Preheat oven to 175 ° C
Separate one egg and with a blender beat the egg white with a pinch of salt until stiff.
Blend sour cream, peanut butter, 200 g of sugar and starch.
Then mix in the Mascarpone cheese, one egg yolk and three eggs while stirring.
Gently fold in the beaten egg whites.
Spread the mascarpone cream on the cookie crust.

3. Fill a deep baking tray with hot water.
Then place the spring pan in deep baking dish. Pan should be in about 2 1/2 cm in water.
Bake in the oven for 50-60 minutes.
4. Pour 125 g cream in a pot and heat. Remove.
Add 50 g sugar in a small saucepan and caramelize over medium heat until golden brown.
Pour in the hot cream and simmer over low heat while stirring until the sugar has dissolved. Allow to cool.

5. Break dark chocolate into pieces. Heat up 75 ml of the cream and add chocolate pieces. Stir until melted and allow mixture to cool.
Add peanuts to a frying pan and roast until golden brown. Then remove.
6. When the cake is done, remove it from the oven and let it cool in the pan on a wire rack for about 1 hour.
Then cover cake pan and refrigerate for about 3 hours.

7. After removing the foil and loosen the cake from the mold.
Sprinkle with peanuts.
Serve with chocolate and caramel sauce.

Watermelon Jello in Lime cups Recipe

Refreshing Watermelon Jello in  lime Cups

Jello is a popular treat, and when you serve it in these fresh lime cups, they make a fun and appealing party dessert.
My recipe below is family friendly, but if you serve it to adults you could add a shot of tequila or vodka for some extra zing!
For this recipe, you will need eight limes and any watermelon flavoured jello mix.

Substitute with cherry or strawberry jello if desired.
First, wash limes and cut in halves,
Use a sharp knife and cut the inside of each lime around the rind to carefully remove flesh.
You could also use a lemon squeezer to squeeze the limes.
However, I found using the knife leaves the cup much smoother looking.

Next, I am placing  each lime halves into a muffin tin mould to keep
it steady and upright when pouring in the jello
Prepare the jello according to its instructions on your box.
Boil and let cool for 5 minutes.

To fill the cups I used a turkey baster.  The turkey baster makes it easy and mess-free to suck up the jello and drop it into each cup.
Kids love to do this job and will gladly help with this fun task!
That’s it when all cups are filled, place the muffin tin into the fridge
overnight or until jello has set.

P.S. I save the scooped out lime filling and juice and use it in my water infuser or drop it into club sodas for a refreshing drink!

Chocolate Peanutbutter Bars Recipe – Easy(No-Bake) Deliciousness

Homemade Chocolate Peanutbutter Bars

Chocolate bars are one of my weaknesses, and I am especially fond of the combination of peanut butter and chocolate.
A friend recently brought over these wonderfully delicious bars and it was hard to believe they are so easy to make.
Moreover, this no-bake recipe is a guaranteed success, and it only requires four ingredients.
This recipe works well with any chocolate wafers, chips or Baker’s chocolate. I used Hershey’s chocolate chips in my recipe.

  •  7 large Honey Graham Cookies
  •  6 oz. Milk or semi-sweet Chocolate (any type)
  • 1/2 cup Peanut Butter
  • 3 oz. White Chocolate or White Chocolate chips

 

Directions:

Use a 13″x9″ glass or baking pan and place aluminum foil or baking paper on the bottom, with the top ends of the paper hanging over the side.
Put your graham cookies on the pan bottom and line them up to completely cover the pan
Next get a microwavable bowl and add chocolate and the peanut butter and heat in microwave for 30 seconds. Stir and heat again for thirty seconds or until completely melted.

Pour the peanut butter and chocolate butter mixture over the graham cookies until evenly covered. I use a warm spoon to spread it.
In the second bowl pour the white chocolate and heat this one for about a 1 minute, stirring every 20 seconds until melted.

Get a spoon and immediately add the white chocolate in globs on top of the peanut butter chocolate mix. Then create a marble effect with a spoon or knife.
Put your pan the fridge to chill for an hour.
When the chocolate has hardened, gently lift the foil from the pan, remove from the bars and cut your dessert into pieces.
I cut each large graham wafer into half and got 14 pieces of chocolatey and leftover bars may be stored in a sealed container in the freezer or fridge.
However, trust me, these will not last long!

Easy Cookie Icing Recipe

Butter cookies are by far my Family’s favourite cookies, and I love to use this easy icing recipe below.
The icing tastes perfectly sweet, and it dries shiny, giving your cookies a
professional glazed look.
The icing may be used for any kind of cookies from Christmas and Easter cookies to Halloween treats, sugar cookies and gingerbread men.
Add any of your favourite food colouring, if you wish.
I like to use Maple syrup with mine for a unique Canadian taste, but other syrups like corn syrups works just as well.
Start out with the ingredients below and add a little bit more milk or syrup, to get the right consistency.

Instructions:

1.Measure confectioners’ sugar and pour into a small dish.
2.Add the milk and stir Pour in the maple or corn syrup and vanilla extract and stir until the icing is smooth and shiny. If needed, add a little more syrup to get a spreadable consistency.
3.The icing is ready to use on your cooled cookies. Simply use a brush and paint on the icing, or put in a bag for piping.

If you wish to have coloured icing, you may now add the desired food colouring.
Use one colour or divide the icing into several bowls, if you want several colours.
Divide into separate bowls, and add food colorings to each to desired intensity.
