Friends, Good Times and The LCBO Food & Drink Magazine

I love the occasional glass of wine dinner or beer with a BBQ, but when it comes to Entertaining, gifting and pairing wine with foods; I always enjoy getting some new and fresh ideas.
That’s how the LCBO Food & Drink Magazine got on my radar.
The Magazine comes out about four times a year and features seasonal recipes, the pick of the month, and expert tips. For example, read up on how to choose the right wine, make the perfect cocktail or learn a thing or two about local and foreign wines.

About LCBO Food & Drink Magazine

LCBO stands for the Liquor Control Board of Ontario, a corporation that deals in liquor sales to both consumers and businesses, including 18,000 products in 634 retail stores and catalogs. It was established by the Ontario government and each year funds (in addition to normal taxes) from the LCBO help to pay for health care, education and other important services in Ontario.

In addition to its retail sales, LCBO runs a Food & Drink magazine for information and entertainment, as I have mentioned above. You can find Food & Drink magazine in stores across the country, but you should also check out their website for inspiration.

Easy Microwave Mug Cake Recipes, No Baking Needed!

Do you ever have the sudden craving for A piece of cake?
The next birthday or holiday may days or weeks away, or it’s 7 p.m. at night.
Besides, you only want to eat ONE yummy serving and not the whole cake to tempt you!
That’s why I love Microwave mug cakes.
They are just the perfect fill-in for the occasional cake craving.
Mug cakes are so easy to make in a snap, and they don’t have to be boring either. The best thing, there is no clean up required, and you don’t even need bowls or a mixer.

Basic recipe for vanilla mug cakes (variations below)

  •  four (4) tbsp pastry or regular flour
  •  three (3) tbsp sugar or sugar substitute
  • 1/4 tsp baking soda
  • four (4) tbsp milk
  •  two (2) tbsp vegetable oil
  • 1/2 tsp vanilla extract

Recipe variations:

  •  chocolate chip mug cakes
  • add extra two tbsp unsweetened cocoa powder
  • add extra tbsp chocolate chips

Directions:

Get a large mug and add the dry ingredients like flour, sugar, baking soda (and any of the optional  ingredients.)

  1. Stir and mix until well blended.
  2. Then combine milk, vanilla, and oil.
  3. Place your cup in the microwave and cook on high for one minute and 30 seconds.
  4. Time may vary with different microwaves.
  5. Mug will be hot, so use oven mitts and remove carefully  from microwave.
  6. Next, insert a toothpick in the middle of the cup.
  7. If it is clean or almost clean, the cake is done and can be  placed on a rack or plate to cool for 5 minutes before serving.
  8. If not done yet, place mug back into microwave and cook for 10 seconds and repeat above steps.(toothpick check)

Sprinkle chocolate chips on top.

Butter cookies are by far my Family’s favourite cookies, and I love to use this easy icing recipe below.
The icing tastes perfectly sweet, and it dries shiny, giving your cookies a
professional glazed look.
The icing may be used for any kind of cookies from Christmas and Easter cookies to Halloween treats, sugar cookies and gingerbread men.
Add any of your favourite food colouring, if you wish.
I like to use Maple syrup with mine for a unique Canadian taste, but other syrups like corn syrups works just as well.
Start out with the ingredients below and add a little bit more milk or syrup, to get the right consistency.

Instructions:

1.Measure confectioners’ sugar and pour into a small dish.
2.Add the milk and stir Pour in the maple or corn syrup and vanilla extract and stir until the icing is smooth and shiny. If needed, add a little more syrup to get a spreadable consistency.
3.The icing is ready to use on your cooled cookies. Simply use a brush and paint on the icing, or put in a bag for piping.

If you wish to have coloured icing, you may now add the desired food colouring.
Use one colour or divide the icing into several bowls, if you want several colours.
Divide into separate bowls, and add food colorings to each to desired intensity.

Tasty and Cost-Effective School Lunch Ideas

So it’s that time of year again, you’ve sent the kids off to school and with that it’s time to start dealing with what can be a frustrating question – what to pack them for lunch? Of course you want to pack items that are healthy, will give them the energy they need to make it through the day, meet the school restrictions, and are tasty but what about the cost? Packing lunches daily can be pretty pricey so let’s take a look at some economical lunch solutions.

 

A Few Things to Keep in Mind

Before even heading to the grocery store to pick up on items, it’s important to first be aware of what food restrictions your child’s school and/or class may have. We are all now very used to the nut-free environments at school, but there can be other items your child can’t bring. It may take a little reading at first as you look at the ingredients on all the boxes and cartons at the supermarket but soon you’ll be familiar with what is safe and what isn’t.

Another thing to keep in mind is to have on hand a selection of containers that will work for your child’s tastes. If you child prefers hot lunches you may want to pick up on a few spill-proof insulated containers, whereas if your child is more of a sandwich type you can find all kinds of perfectly sized reusable containers. It’s all about making your life easy, convenient, and quick when it comes to packing lunches.

Think Ahead
A great way to save money is to think ahead when you’re cooking dinners. Try to pick meals that can be versatile and can then be used in lunches for the next few days. This means you aren’t preparing new things or having to purchase new items. An example of this is pasta, which can be cooked in advance even on Sunday afternoon/evening. Cook up a large pot and then start getting creative. You can quickly transform that pasta into a cold salad, add a warm and comforting sauce to it, bake it with some grated cheese and your child’s favourite spices, or add pesto, kidney beans, and veggies for a scrumptious dish. Each day you can serve up the pasta in a different way taking no more than 15 minutes to prepare and at a very low cost.

Another cost-effective option that is quick and simple is a selection of finger foods. Pick up your child’s favourite veggies, cold meats, a little cheese, eggs (for hard-boiled eggs), hummus, and some crackers. This sort of meal does well with the reusable containers that have separate sections in them. You can pre-wash and cut up all the vegetables and fruit (if you are sending a fruit). Send them with a variety of nibblers each day, and it will be fun for them to eat, super fast for you to put together, and very cost-effective. To add a bit of substance if they are a big eater you can also include a soft tortilla wrap so they can eat that separately or create their own customized wrap at lunch time.

Meat Eaters Unite
If your child is a meat eater and can’t seem to go a meal without this food group you can still satisfy their hunger in a cost-effective way. Chicken drumstick are one of the cheapest cuts of meat you can find. Look for the large value packs to go on sale and pick up a pack or two then place one or two drumsticks in a freezer bag and pop them in the freezer. Take out one freezer bag at a time and cook the drumsticks in advance, on say that Sunday night. You can now include fresh meat in their lunch for days and again do it in different ways. Perhaps make a sandwich from the meat, a pasta and chicken salad, a chicken wrap, or just a full drumstick with a container of ranch dressing on the side.

This same idea can be done with any type of meat the key is to package them separately before freezing them.

Warm them Through the Cold Months

Even though we are still enjoying relatively mild and beautiful weather, it won’t be long before it starts getting chilly. This is the perfect time to start enjoying soups and stews, which can be very cheap and easy to make. A slow cooker is a wonderful way to make use of all those leftovers in your fridge, and you can throw in the rice, kidney beans, lentils, potatoes, pasta, or barley to give it more substance and fill their bellies. Don’t forget experiment with those warm and comforting spices such as cumin, garlic, onions, thyme, ginger, nutmeg, and chilli peppers that also do an excellent job chasing away those cold and flu bugs. You can add a nice thick slice of fresh bread or a roll that they will be able to dip into the soup and leave them satisfied.

Keep in mind many stews/soups can be frozen so you can ladle them into individual meal portions in your reusable containers making lunch preparations so simple. All you’ll need to do is take it out of the freezer the night before and let it defrost in the fridge overnight. Warm it up in the morning and pour it into an insulated spill-proof thermos.

Conclusion

There are plenty of ways to make lunches exciting, tasty, healthy, and cost-effective for kids. Planning out the lunches in advance, taking advantage of sales when you find them, seasonal items, and a little advance preparation can actually make a big difference for all.

Yonanas Best way to to eat Bananas

My girls and I don’t eat bananas. It’s not that we don’t like them.
To our taste buds they seem just a little but too dry and starchy.
But since bananas are healthy and are a good source of Vitamin C, Vitamin B and Magnesium I try to make them in Banana breads and muffins once in a while.
The downside is of course; you’ll have to add extra sugar, flour and therefore extra calories. It also it takes a bit of time to make and bake muffins and banana bread.

So when we went shopping at Walmart a few months ago I noticed a contraption called the “Yonanas” on the shelf that promised to make healthy   ice cream out of 100% fruits like bananas. I was intrigued, but obviously my first thoughts coming to mind were  “Impossible” and “Yeah, right.”
By that time, my kids had discovered this “ice cream machine”  as well. They were immediately excited and agreed that they would be eating Bananas and fruit every day if we PLEASE just buy this Yonanas machine.

I  had to admit it looked delicious and nutritious. I kept reading the instructions on the box, waiting for the catch. What, I didn’t have to add extra sugar, heavy cream. Did the machine require me to buy special artificial flavours or sweeteners?
It sure sounded a bit too good to be true. Being a natural skeptic, I placed the box back onto the shelf.

The next week I was shopping at Walmart again and this time the Yonanas was on sale for a whole $10 off.
We do enjoy a treat of ice cream a few times a month, and if there really was a way to make it healthier, I was now happy to give this a try. So, this time the Yonanas went into my cart and I hurried to the checkout.

Determined this machine would not suffer the same fate and collect dust in the basement as my “healthy donut maker” and other little “As Seen On TV” novelties did, I opened the box and we started the assembly right away.

The Yonanas consists of the main unit and five parts, and they are super easy to assemble (video here)
For the first use, we cleaned all parts with warm soapy water. The chute, blade and plunger parts are even dishwasher safe.
The machine comes with its own recipe booklet and more can be found online.

To make a batch of Yonanas Ice cream you can use frozen

  • bananas
  • strawberries
  • mixed berries
  • mangoes
  • blueberries
  • or a mixture of bananas and berries
  • bananas and various (frozen) candies like Reese’s, Smarties, Caramels etc.

Picking the “perfect” bananas is very important.
They cannot be green (as pictured). I pick nice yellow ones, with a few brown spots.
The same type you would choose for baking. The upside is that they are often found on sale/ clearance as well.

When preparing the bananas, I recommend you peel bunch of them, place them on a baking sheets and freeze the bananas overnight.
The next day you can use 5 or 6 of the bananas for your recipes (or whatever you need) and place the other ones in a Tupperware container, back in the freezer.

That way, you always have frozen bananas, ready to be used when you feel like making a treat in a flash.

Take the six bananas (serves about 5 people) and leave them on a plate for about 8 minutes. They will defrost slightly and have the perfect  consistency to make ice cream.
If you leave them too long, the mixture will be a little soft.

Get a bowl ready and place it beneath the Yonanas spout.
Then turn on the machine and simply place one banana inside the chute. Gently push it down with the plunger and follow with the next banana.

This process is super fast and once you have used all the bananas, make sure to scoop up the rest from inside the machine.
There is quite a bit of “ice cream” between blade and rubber. It’s too good to waste, so make sure to add it into a bowl.
Then simply mix and scoop into bowls and serve.

Of course, you are wondering how does it taste?

The answer in short: It’s just Amazing!

I served it to my husband, and he did not want to believe it wasn’t ice cream.
It is super creamy, incredible delicious and taste rich. My daughter who hates eating bananas loves this treat.

So far  we have tried the berries Yonanas; Banana mixed with berries, Bananas, PB and Mixin’s and melon Yonanas.

We loved every one of them except the cantaloupe. It was so nasty that not even hubby would eat it. Maybe it ws not ripe enough, or maybe this fruit is unsuitable?

The Yonanas has become a favourite dessert in our home, and we especially enjoy the Yonanas with Mixin’s.

My kids love to add Reese’s pieces and a scoop of peanut butter (per recipe)
It tastes as good as Premium any ice cream, and it’s hard to believe it’s just bananas and a little candy.

Tips

Much like the Recipes tab, the “Tips” page gives you different browsing options. Some times cover how to make dinner faster, how to stock your kitchen, and how to be creative with leftovers.

Offers and perks include coupons for General Mills’ products and coupons on products by companies partnered with General Mills like Dairy Queen. Once you click on a coupon, you receive instructions on how to save money. For the Dairy Queen offer, you must purchase on of the participating cereals like Cheerios, Lucky Charms, or Almond Oatmeal Crisp. After that, you must cut out the coupons inside the package and redeem the coupon at participating locations.

Quick Chili Con Carne Recipe

Quick Chili Con Carne

As soon as the leaves fall, and the temperatures drop, I feel the need for a hot bowl of chili.

There is nothing better to warm you up on a cool day, than enjoying chili.

For dinner, I like to serve it with rice and a vegetable or salad.

Leftovers the next day  taste just as great or maybe even better and a few tortilla chips are great for dipping.

 

Ingredients for 4 to 6 servings
1 medium cooking onion
2 cloves of garlic
1 red pepper
2 tbsp oil
600 g mixed ground meat
salt to taste
pinch of cayenne pepper
1/4 tsp. dried rosemary
2 tbsp tomato paste
500 g tomatoes happened
1 can (425 ml) chunky tomatoes
2 tsp vegetable stock
1 can (425 ml) Corn
1 can (425 ml) kidney beans and baked beans
4 tbsp. sour cream

 

Directions

Wash peppers and cut into small pieces..
Peel onion and garlic cloves and chop finely.
Heat  the oil in a large saucepan.   Add the ground meat and fry on medium heat until brown.
Add salt, cayenne peppers and rosemary.

The mix in the onion, garlic and pepper and fry until soft.
Add the tomato paste., can of tomatoes and broth. Cover and simmer for 5 minutes.

In the meantime rinse and drain the kidney beans and corn and add them to the pan.
Cover and simmer for another 5-10 minutes.
I like to serve it with rice or tortilla chips.

To garnish you may top with sour cream, rosemary and chili pepper (optional)

Baked Apples Recipe, Grandma’s Traditional Bratäpfel with Marzipan

Bratapfel mit Vanillesauce

A traditional Christmas treat in our home is my Grandma’s Baked Apples dish, or as they are called Bratapfel
in Germany. This heavenly apple dessert is a perfect finale to any Holiday meal or served as an afternoon treat.
My Grandmother used to stuff our apples with Rum raisins, marzipan, almonds and serve them warm, topped with a delightful vanilla sauce.
You may also use a scoop of Vanilla ice cream instead.
I love the sweet smell of  homemade baked apples, and these treats are a welcome alternative to traditional Christmas cookies and bars.

To get started it’s s important to choose a suitable variety for baked apples.
Best choices include tart apples like Cortland, Mutsu, Idared or Red Prince.

 

Ingredients:

  •  6 medium Apples (red)
  • 1/2 cup or 60g chopped almonds
  • 2/3cup or 150g Marzipan paste
  • 2 tbsp. or 30g Butter
  • 1/2 cup brown sugar
  • 1 ½ sachet vanilla sugar
  • 1 1/2 tablespoons  raisins

 

Instructions
Prepare the filling
Mix the chopped almonds, marzipan, butter, brown sugar  and vanilla sugar mix, knead  and form  into 6 Roles.
Place the  apples in a  well-greased oven dish and place a marzipan roll into each of the apples.

Prepare the Apples:
Since  we keep the skin, make sure to wash apples well. Cut off the top third of the Apple and place aside.
Carefully remove the apple core with a knife or use an apple decorer. Make sure to leave the bottom intact.

Grease the bottom of a baking dish with butter or margarine
and place the apples inside.  Cover each apple with it; s top and bake the apples at 390F for 25 minutes in the oven baking.

Homemade Garlic Butter Recipes – Easy & Herb Garlic Butter

Garlic butter is one of these homemade items that should be in everyone’s fridge.
I never purchase store bought packages, as they  are rather expensive (if you can find them), and it’s so easy and fast to prepare it at home.

Garlic butter is so versatile. Spread it on fresh baguette, your baked potatoes or use in cooking for your vegetables or sauteing.

Freshly made garlic butter is always a treat at any dinner party.
Place a variety of fresh artisan breads and serve the garlic butter in an elegant dish.

Scroll down below for two great recipes, simply and easy garlic butter and garlic butter with herbs.

This recipe below is easily adjusted to your own taste.
It only takes 10 minutes to make.

Simple Garlic Butter Recipe
Use the following ingredients:

250 g  soft butter
1/2 tsp of  salt
1/2 tsp pepper
4-6 garlic cloves (minced)
optional 1/4 cup fresh chives (chopped)  or  teaspoon Italian seasoning
Peel and mince the garlic cloves on a cutting board with a knife or use a garlic press. Set the chopped garlic aside.In a small bowl, cream the butter and add the garlic, salt, pepper and spices.
Mix all ingredients, serve or store in refrigerator.

 Herb Garlic Butter

Ingredients:

  • 200 soft butter
  • 1 bunch of parsley, finely chopped
  • 1 bunch chives
  • 2 cloves of garlic
  • salt and sweet Paprika to taste.

Finely chop the parsley and the chives and the butter. Peel and mince the garlic cloves .
Add the remaining spices and the chopped herbs and blend with the butter.

Mix until well blended. Place mixture into a bowl and let it chill in the fridge for min. of one hour.

My time-saver Tip: There are also ready made herb pastes or blends available at your local store’s produce section. I have used them to whip up Herb garlic butter in a pinch.

The use of Splenda has been steadily increasing in my kitchen. Years ago, I only used Splenda sachets to sweeten my coffee and tea.
They are also very handy for on-the-go. Lately, I have switched to the Splenda minis, which fit even into my smallest purse.
It never occurred to me to use Splenda in baking until a couple of years ago, when I joined the Splenda newsletter, which contained some delicious recipes. I learned that Splenda can be used for baking and cooking and is measured in the  amount as sugar. Pretty simple right? There is even a Splenda brown sugar blend, which is perfect for cookies, muffins and banana breads. (and more)

My family has been adapting to a low-carb and low-glycemic diet, and I am finding Splenda is one of the more inexpensive sugar substitutes.

About Splenda

Splenda is a brand of artificial sweetener. It is a sucralose-based sweetener made from sugar. Sucralose was discovered by Tate and Lyle, and they partnered with Johnson & Johnson to make the Splenda product.

Sucralose was actually discovered in 1976, but it took years before it (and Splenda) hit Canada’s market. In the time between these two occurrences there was a lot of research done on the health effects of ingesting sucralose, and by 1991 Health Canada agreed that sucralose was safe for anyone to eat as an alternative to regular sugar. To date there have been over 110 studies that confirm the safety of sucralose

Splenda is not sugar, but it does start with sugar. In a transformation process, three hydrogen-oxygen groups from the sugar molecules are replaced with three chlorine atoms. The process changes sucrose into sucralose.

Sucralose is known as being a ‘zero calorie’ sugar alternative, although technically there is a very small amount of caloric content. A single serving of Splenda contains 3.36 kilocalories of energy, which is 31% of that for regular granulated sugar. Despite these trace amounts of calories, government regulations allow for Splenda to be marketed as a “No Calorie Sweetener.”
