Angie’s Mini Sweet Potato Pies

These sweet potato pies are a delicious fall and winter side dish and a family favourite in my home. With this recipe, your kids are guaranteed to eat their veggies first.
We love cinnamon, and the Maple syrup gives these  Mini Sweet Potato Pies the authentic Canadian taste.
I love to serve them with turkey or a roast. Expect your dinner crowd to ask for seconds, so make sure to bake enough. You may even want to increase the number to 24!

 

Ingredients:

  1.  6 ounces (170g) peeled sweet potato
  2.  12 mini pie shells
  3. 1/4 cup and 2 tablespoons (90ml) evaporated skim milk
  4. 1 egg whites
  5. 2 tablespoons Maple syrup or white sugar
  6. 1 tablespoon brown sugar
  7. 1/2 teaspoon ground cinnamon
  8. pinch of nutmeg, less than 1/8 teaspoon optional. If you like nutmeg you may want to add this spice. I m not a huge fan, so I just use a pinch.
  9. ptional pecan or walnut halves to decorate

 

directions:
Wash and peel the sweet potato. Cut in cubes and place with
1/4 cup of water into microwaveable pot.

Microwave until tender (about 2-3 minutes) depending on the type of microwave. Drain and let cool.
Preheat your oven to 425 degrees F (220 degrees C).
Pour the evaporated milk, egg whites, maple syrup, brown sugar
Cinnamon (nutmeg) into a blender. Add the sweet potato and blend until smooth. If you have no blender, you may simply use a potato masher, to mash and mix.
Evely divide the mix into the 12 mini pie shells.
Decorate with pecan or walnuts halves (optional)
And bake for 15 or until  a toothpick inserted into the mini pies comes out clean.
Serve and enjoy.
